Post-call Lavender Surgeon Steak & Spelt Pesto Recipe | scrubgrub

you're post call. you want flavour. you'll love this lavender post-call steak recipe created by a dietitian-chef Shayna Huang. Check her out on instagram


the preop plan:

for the steak:

  • steak - your choice of cut. I prefer rib steak with the fat left on. It's a flavour bomb that will melt in your mouth

  • lavendar sprigs

  • olive oil

  • salted butter

For the spelt pasta pesto:

  • spelt pasta

  • kale - we get ours from our local CSA (@ubcfarm) and our backyard

  • garlic

  • almonds (or your favourite nuts or seed)

  • olive oil

  • parmesean cheese

  • salt

  • lemon

intraop:

kale pesto:

  • pulse garlic, nuts and cheese in a food processor until crumbly

  • add kale leaves and and olive oil until the desired consistency

  • add salt and lemon juice to taste

  • stir into cooked spelt pasta

steak

  • season steak with salt & pepper

  • cook in olive oil, butter and lavendar sprig

  • when you flip, make sure you have another sprig of lavendar and another wad of butter to cook the other side

  • baste

  • rest steak

  • eat
