the preop plan:
for the steak:
steak - your choice of cut. I prefer rib steak with the fat left on. It's a flavour bomb that will melt in your mouth
lavendar sprigs
olive oil
salted butter
For the spelt pasta pesto:
spelt pasta
kale - we get ours from our local CSA (@ubcfarm) and our backyard
garlic
almonds (or your favourite nuts or seed)
olive oil
parmesean cheese
salt
lemon
intraop:
kale pesto:
pulse garlic, nuts and cheese in a food processor until crumbly
add kale leaves and and olive oil until the desired consistency
add salt and lemon juice to taste
stir into cooked spelt pasta
steak
season steak with salt & pepper
cook in olive oil, butter and lavendar sprig
when you flip, make sure you have another sprig of lavendar and another wad of butter to cook the other side
baste
rest steak
eat
